SMOKED CHICKEN & BROCCOLI CASSEROLE

This recipe is perfect for busy back to school schedules. It’s quick and it’s tasty and you can even prepare it in advance.

INGREDIENTS

  • 1 lb. of Edley’s Smoked Chicken

  • 1 1/2 Cups Steamed Broccoli

  • 1/2 Cup of Milk

  • 1 1/2 Cup of Shredded Sharp Cheddar Cheese

  • 1 Can of Cream of Mushroom

  • 2/3 Cup of Greek Yogurt

  • 1 tbs. Honey Mustard

  • 1/2 tbs. Everyday Seasoning

  • 1/2 tsp. Paprika

  • Bread Crumbs

RECIPE

  1. In a large mixing bowl, combine cream of mushroom soup, milk, 1 cup of the shredded sharp cheddar (save the other 1/2 cup for topping), greek yogurt, and honey mustard.

  2. Lightly cover the top with Everyday Seasoning and add paprika. Mix in well.

  3. Partially steam a bag of broccoli. About 2 minutes less than the recommended time.

  4. Combine broccoli and smoked chicken with your sauce base.

  5. Distribute mixture evenly into an 8x8 dish.

  6. Top with remaining 1/2 cup of shredded sharp cheddar and bread crumbs, as desired.

  7. Bake for 15-20 minutes at 400 degrees. Look for bubbling on the edges and a lightly browned top for doneness.

  8. Enjoy on its own, or over a base like mashed potatoes, rice, cauliflower rice, etc.

    CATHARINE’S KITCHEN HACK: Prep the casserole ahead of time and stop after step 5. Wrap dish with plastic wrap and bake when desired. When you’re ready to cook, top with cheese and bread crumbs.
