SMOKED CHICKEN NOODLE SOUP

Smoked Chicken Noodle Soup will warm up your soul. Start with smoked chicken from Edley’s and it’s a win for cold weather, under the weather, or eating on the better side kind of days.

INGREDIENTS

  • 1 Pound Edley's Smoked Chicken

  • 1 Package Bear Creek Chicken Noodle Soup Mix

  • 2 Large Carrots (1 1/2 cups chopped)

  • Yellow Onion (1/2 Cup diced)

  • 2 Packs Chicken Broth (64ox)

  • Olive Oil - 1 TBS

  • Salt & Pepper to taste

  • Fresh Thyme and Rosemary

RECIPE

  1. In a large pot, heat 1 TBS of olive oil.

  2. Add diced onion and cook until translucent.

  3. Add carrots and cook for 2-3 minutes.

  4. Add about a cup of the chicken broth or enough to submerge the carrots and boil until softened. About 5 minutes or until you can stab a carrot with a fork.

  5. Add the remainder of the chicken broth and the package of the Bear Creek Chicken Noodle Soup Mix and stir until combined.

  6. Bring it to a boil. Stirring occasionally.

  7. Reduce heat to medium and let simmer uncovered for 10 minutes.

  8. Stir in Edley's Smoked Chicken and let heat for 2-3 minutes.

  9. Add salt and pepper to taste.

  10. Serve with your favorite crackers and garnish with fresh Thyme and Rosemary.
