Four Meals out of Edley’s BBQ? Oh Yeah!
Looking for dinner ideas and don’t have a ton of time?
Join the club. It’s tough working all day just to come home and scrounge around the kitchen for ingredients for a home-cooked meal. You end up with a plain old chicken breast, rice, and a can of black beans. Not very exciting – or flavorful.
We can help with the dinner conundrum. Here’s what you do. Buy two pounds of Bar-B-Que from Edley’s and make it last for FOUR meals. Bar-B-Que all week? Yes, sir. We’re giving you a few different ways to enjoy Bar-B-Que in a way that doesn’t feel like leftovers! We’ll also give you a shopping list of all the extra ingredients you’ll need!
Night one: Traditional Bar-B-Que Sandwiches (½ lb)
Pick up two pounds of Edley’s Bar-B-Que and a couple sides on the way home. Sauce and pickles come with the Bar-B-Que and you can add a couple of buns (at $1 each). You can choose from our sides to make the perfect meal for you and your better half. Maybe green beans and cornbread? Cole slaw and baked beans? Is your mouth watering yet? Whatever you choose, you’ll LOVE it! See the menu here!
Here’s about what it will cost you before taxes and tip: 2 lbs Bar-B-Que pork – $24 & 4 pints of sides (you’ll save two sides for night four!) at $5 each brings you to a whole $44. Drinks are up to you. Pick up a gallon of sweet tea or make sangria at home!
TIP: Make sure you leave about a pound of Bar-B-Que sauceless for recipes later in the week.
Night two: Bar-B-Que Pizza (⅓ – ½ lb)
Who doesn’t love pizza?!?! For night two, we’re making a Bar-B-Que pizza. This recipe continues the traditional flavors of Bar-B-Que but adds in some contrasting flavors. This fun take on Bar-B-Que uses Bar-B-Que sauce in the place of pizza sauce. Top with meat (about ⅓ to ½ lb), onions, cheddar cheese and arugula for a delicious and quick meal!
Night three: Taco Soup (½ lb, maybe a bit more.)
Let’s shift our taste buds to mexican flavors! Use about ½ lb of the leftover pork to make a savory taco soup. This is so yummy and can be thrown in the crock pot in the morning to make it extra easy! Soft Bar-B-Que pork mixed in with beans, corn, and tomatoes makes for a filling dinner and Edley’s Bar-B-Que adds the perfect smoky flavor!
TIP: Do you have leftover cornbread? Cut it into cubes and bake it to make croutons for your soup!
Night four: Grown-Up Grilled Cheese (with Bar-B-Que!) (⅓ lb)
The possibilities are endless here! Combine the pork with gorgonzola, provolone, and roasted red peppers to make a grown-up grilled cheese. Or make a grilled cuban using ham, grated swiss, pickles, mustard, and mayo! Remember the two extra sides you picked up on night one? Get those bad boys out and heat them up to enjoy with your grilled cheese!
Extra items shopping list!
-Pizza crust. Publix has a great dough that you roll out and top! But for even less fuss, get the kind that’s already rolled and prebaked.
-One small onion diced. A sweet vidalia onion works really well if you like a sweet caramelized flavor. Use a white onion if you like the tear-jerking onion taste better.
-About 2 cups of cheddar cheese
-About 2 cups of fresh arugula
-One can black beans or pinto beans
-One can corn. Make it creamed corn for a thicker soup.
-One can of chicken broth. If you need more liquid, add water.
-One can of diced tomatoes. Do not drain.
-One can diced green chilis (optional)
-One package of taco seasoning
-Thick sliced bread
-roasted red peppers
For the cuban – mayo, mustard, swiss cheese, sliced ham, pickles
